Another healthy vegan recipe that I’ve tried and it was absolutely delicious. This has more of an Asian twist to it, since I’ve grown up eating Asian food, so this is a dish pretty close to home.
Two servings (Under 30 minutes)
- 5- 7 tofu cubes (about an inch each)
- 10 thinly sliced mushrooms (any kind)
- 2 tablespoons of oyster sauce
- 2 tablespoons of olive oil
- 1 tablespoon of brown sugar
- Finely chopped spring onions
- Salt, to taste (optional)
- 4 cloves of minced garlic
- A bowl of rice (recommend)
Step 1: Heat up a frying pan on low, drizzle the olive oil and fry the tofu until golden brown. Frying it slowly will help make the tofu more structure with a crispy skin. It usually takes about 5-10 minutes for a crispy golden outer layer.
Step 2: Take the tofu off the heat and place it on the side. Now, add in the minced garlic on to the low heat pan until it turns golden brown then, add in oyster sauce follow up with the brown sugar to balance out the saltiness from the sauce.
Step 3: Give it a few stir before adding in the mushrooms. Let it sits for a couple minutes to soak up the seasonings before you add in the tofu. Sprinkle some salt if you like it, but usually the oyster sauce is already pretty salty alone.
Step 4: Leave it on the heat for another couple of minutes before taking off.
Step 5: Sprinkle some spring onion on top for some extra fragrance. And, enjoy!
Now, a plant-based Asian dish is made. I hope you like the taste of it, I love it and you could always switch it with some other kind of vegetables.
